At Substans, we want to give our guests a gastronomic experience beyond the usual. Our newly built restaurant on the top floor of Pakhusene on Aarhus Ø is decorated with inspiration in the stylish architecture of the 1960s,

in simple and natural materials that fill you with warmth and presence, from the moment you step inside.

Our chefs are not bound by dogmas, but are driven by a basic respect for local, seasonal ingredients and good, solid kitchen craftsmanship.

This also applies to our waiters, who take pride in selecting beverages that evoke enjoyment and excitement and accompany the evening’s menu to perfection.

LUNCH

As one of the few top restaurants in Aarhus, we open the doors to lunch every Friday and Saturday with table reservations from kl. 12.00

For lunch, we serve a selection of the dishes you can find on the evening menu, but to a slightly lesser extent, so the meal can be enjoyed during an afternoon.

Here you can choose between four or six dishes, respectively, with accompanying snacks and the option of champagne and a wine menu.

We also offer a business lunch consisting of three quick dishes without snacks, so the lunch does not interfere with a busy working day.

EVENING

As a guest at Substans, you will be presented with a menu consisting of a varying number of servings, all depending on the season and the ingredients we have available in the kitchen.

Typically, there will be more dishes in the spring and summer months, where everything sprouts and grows wild, and slightly fewer but a bit heavier dishes in the fall and winter months.

The guiding principle in the composition of our dining menus across the turn of the seasons is a curious and open-minded approach to the good meal.
